Tuscan White Bean Fettuccine

Ingredients
  

  • 1 tbsp olive oil
  • 1 sm white onion chopped
  • 2 cans great northern beans drained, but not rinsed
  • 2 tbsp minced garlic
  • 2 tbsp butter alternative
  • 1 box fettuccine
  • 2 cups crushed tomatoes
  • 5-10 fresh basil leaves
  • 1/2 cup white wine
  • salt to taste
  • pepper to taste

Instructions
 

  • In a pan over medium heat add the olive oil and onion. Sautee until onions are translucent.
  • Add garlic, tomatoes, white wine, basil, beans, butter alternative. Stir until combined. Cover and simmer until beans are mushy.
  • Cook fettuccine according to package directions. Drain, add to pan with sauce.
  • Stir the fettuccine with the sauce over medium heat until evenly coated. Serve.
    If not vegan, top with fresh parm.
